Made from two varieties of grapes that are dried on the vine, with the 'must' boiled gently until it reduces to 1/5 of its initial volume. The syrup is then aged in oak barrels to allow the taste to develop. Vincotto is a versatile vinegar used as a condiment, mere drops drizzled over roasts take on a much richer flavour.
