The traditional French lentil is greeny-blue in colour with a peppery taste. Due to their firm texture they may take longer to cook than regular lentils, they hold their shape well once cooked. They are an obvious choice for winter soups, salads, curries, pilafs, stuffing and stir-fries. Mix with breadcrumbs and use to stuff peppers or eggplant.
